Guest Post: Apple Cinnamon Maple Cake by Doctorate Housewife

We made it safely to Hawaii yesterday!!  The flight went well and we are staying at my parents’ house until tomorrow when our things arrive.  We can’t wait to get settled in 🙂  Since we’re in the midst of moving, Jessi from Doctorate Housewife generously offered to do a guest post for me!  Thanks, Jessi!  I love reading her blog for the scientific basis behind fitness and exercise, and her yummy recipes 🙂  Please check her out and enjoy this apple cake recipe, can’t wait to make this!

Hi, I’m Jessi and I blog over at Doctorate Housewife. I love reading Maura’s blog, especially when she has great healthy recipes like her Peanut Butter Oatmeal Bars. She’s moving this week, so I offered to lighten her load by guest posting with a healthy recipe of my own. I hope you like it – Apple Cinnamon Maple Cake.

Here’s what you need:

  • 1 tsp maple extract
  • 100g applesauce
  • scant 1/2 cup apple juice
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 1/2 cups flour
  • 1 tsp  baking powder
  • pinch salt
  • 2 pink lady apples
  • 2 tbs cinnamon

Here’s what you do:

  1. Heat oven to 160C/350F. Line 8×8 inch pan with parchment paper.
  2. Peel and cut apples. Toss with cinnamon in a small bowl and set aside.
3.  In a medium bowl, whisk together first 5 ingredients. In a separate bowl mix dry ingredients. Combine with wet. Fold in apples.
4.  Bake for 25 minutes or until tester comes out clean. Best served warm with vanilla ice-cream.

    And hello, Jessi! This cake looks delicious! And it certainly seems healthier than most desserts. It’s a win-win for moi :). I’m not a big fan of pink lady apples. Do you think I can substitute them with fuji instead? Thanks for sharing!
