Happy Friday! After a busy week, this is the kind of comfort food that I crave…herbed parmesan chicken tenders blanketed in marinara sauce and creamy mozzarella cheese…did I mention this is a healthy recipe? This would be perfect for a Sunday night dinner, but quick and easy enough to make on the weekdays too.
First, combine Italian seasoned breadcrumbs with 2 T of grated parmesan and 1/8 tsp salt. Beat one egg white in a separate bowl. Dip your chicken tenders in egg white, and then dredge in the breadcrumb mixture. Melt butter in a nonstick skillet or cast iron pan, and add chicken, cooking 3 minutes each side or until done.
Next, mix together marinara sauce with balsamic vinegar, 1/8 tsp salt, and 1/4 tsp black pepper. Spoon on top of the chicken tenders, and then top with your mozzarella cheese slices. Cover and allow to cook until the sauce is heated through and the cheese is melty and gooey. Alternatively, you could place your pan under the broiler to melt the cheese, but I didn’t feel like heating up my oven
That melty cheese makes me happy Top with more parmesan cheese and devour. This is so delicious…Patrick said it is a winner so it’s husband approved too! Serve it on top of pasta with more marinara sauce and a fresh salad for a healthy and comforting dinner. Or put it on a crusty loaf of bread and make a chicken parmesan sub!
