Light Lemon Squares

These healthy lemon squares are the perfect summer treat!  I just love the tart and sweet filling combined with the buttery crust.  Lemon squares have always been a favorite of mine, and this recipe from Cooking Light definitely satisfies that craving without all the extra sugar and butter!

First, make your crust.  Beat butter and sugar together with an electric mixer until creamy, then gradually add flour until the mixture resembles fine crumbs.

Press the mixture into an 8×8 pan, and bake at 350 degrees for 15 minutes.

Next, beat eggs until foamy.  Add sugar, lemon rind, lemon juice, flour, baking powder and salt and mix well to combine.  Pour topping over the crust and bake at 350 degrees F for 20-25 min or until set.

Cool on a wire rack and then top with powdered sugar before serving.  I put mine in the refrigerator to help make the squares easier to cut.

These were so delicious…lemony tart yet sweet, and perfect with some fresh strawberries!  I hope you try these for your next summer picnic or potluck!

Some of our favorite summer treats are: ice cream, strawberry salsa, iced coffee, and just fruit in general! Pretty typical I think. 🙂

  2. These lemon squares look so wonderful! I love them so much and since I introduced them to colleagues, this has also become their favorite as well. 😉

  3. These look a-mazing, I’m a sucker for all things lemon! Plus, I love that they’re a lighter version without any fake or low-fat ingredients. Definitely bookmarking this one!
