This is a recipe that I love to make for my husband, or share with friends who are in need of some inspiration in the kitchen. When I first made this for my husband, he thanked me for making such a delicious dinner before he went to sleep that night…that is when you know you have a winner, folks! I normally make this recipe with chicken or beef, but we had some leftover salmon that went remarkably well! My favorite is chicken, but I recommend you try all the different variations. The marinade is based off of this recipe from food.com.
1 pound sliced chicken breast, sirloin steak strips, or fish
2 teaspoons olive oil
1 tablespoon lime juice
2 garlic cloves, minced
1/2 teaspoon chili powder
1/4 teaspoon chipotle chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1 onion, sliced
1 red pepper, sliced into thin strips
In a small bowl, combine the olive oil, lime juice, garlic, chili powders, cumin, salt and pepper. The mixture will be more like a paste. Add your protein of choice and marinate for at least 30 minutes, longer if you have the time. Saute over medium high heat in a nonstick skillet. Add the onions and peppers in the last 1-2 minutes, until just softened.
Serve over warm whole wheat tortillas and top with your favorites: shredded cheese, tomatoes, salsa, sour cream, or my topping of choice, guacamole!
Now that the weather is warming up, you could put the marinated meat and veggies on the grill for even more flavor. We just bought a Weber Q portable grill and we love it! It’s small enough that you can easily transport it in your car, but large enough that we were able to fit 9 hamburgers on it the other night! I can’t wait to take it to the beach and have a BBQ by the ocean 🙂
