Healthy Cashew Chicken


This is one of my favorite dinner recipes to make for our family.  If you’re having a craving for Chinese take-out, try this meal instead…it’s so much healthier for you, and just as delicious!  The recipe can be found at How Sweet It Is.  I love the savory recipes on her blog and this one is my favorite!


Start by cutting up a red pepper and some green onions, along with some boneless, skinless chicken breast or chicken thighs.


Sprinkle salt and pepper over the chicken, and then coat the chicken pieces with cornstarch and saute them in a hot pan with a little bit of oil until nice and brown (don’t overcook, especially if you are using chicken breast as it will get dry).  Then add crushed garlic, your red pepper, green onions, edamame, and cashews.  Mix together a simple sauce of honey and soy sauce, and pour that over.  Serve immediately over brown rice or jasmine rice.

The cornstarch gives the chicken a little bit of crispiness, and the combination of sweet and salty flavors is just amazing!  This one is definitely husband approved.  It’s also a great way to get your kids to eat edamame 🙂  I buy my edamame from Trader Joe’s, it comes frozen and already shelled, which is perfect for this easy, healthy, and delicious dinner.  You can play around with it and try different combos of veggies…snap peas, broccoli, mushrooms would all be yummy.  If you are vegetarian, you could also substitute extra firm tofu for the chicken.
