Today is my last day of work before our big move to Hawaii and the arrival of baby #2! It’s bittersweet, as I will definitely miss seeing patients and being at the office with my staff. I wanted to bring them something special on my last day, and decided on chocolate chip cookies (which will be featured tomorrow), but this would have been a good breakfast choice as well
Is anybody else addicted to Pinterest? One of my friends pinned this recipe from Gingerbread Bagels, and I knew I had to give it a try! It’s super healthy with no oil or butter, and has all the goodness of creamy peanut butter, banana, and oatmeal…the perfect wholesome breakfast or snack!
It’s really kid friendly too, my daughter was so excited to help me do all the mixing, mashing and licking of the peanut butter spoon
Combine oats, light brown sugar, baking powder, kosher salt and cinnamon in a bowl. In a separate bowl mash up 1 banana, and then mix in the egg, milk, vanilla extract, and creamy peanut butter. Add the dry to the wet and mix until combined. Place in a greased 8×8 pan and smooth the top. Bake at 350 degrees for 20 minutes.

Peanut Butter Banana Oatmeal Squares
From Gingerbread Bagels
1 1/2 cups old fashioned oats or quick cooking oats
1/4 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup milk
1 large egg, lightly beaten
1 large mashed banana
1/4 cup creamy peanut butter
Mix oats, light brown sugar, baking powder, kosher salt and cinnamon in a bowl. In another bowl, mix banana, peanut butter, milk, egg, and vanilla extract. Add the dry to the wet and mix just until combined. Spread into a greased 8×8 pan and bake at 350 degrees for 20 minutes.
