Happy Friday! After a busy week, this is the kind of comfort food that I crave…herbed parmesan chicken tenders blanketed in marinara sauce and creamy mozzarella cheese…did I mention this is a healthy recipe?
This would be perfect for a Sunday night dinner, but quick and easy enough to make on the weekdays too.
First, combine Italian seasoned breadcrumbs with 2 T of grated parmesan and 1/8 tsp salt. Beat one egg white in a separate bowl. Dip your chicken tenders in egg white, and then dredge in the breadcrumb mixture. Melt butter in a nonstick skillet or cast iron pan, and add chicken, cooking 3 minutes each side or until done.

Next, mix together marinara sauce with balsamic vinegar, 1/8 tsp salt, and 1/4 tsp black pepper. Spoon on top of the chicken tenders, and then top with your mozzarella cheese slices. Cover and allow to cook until the sauce is heated through and the cheese is melty and gooey. Alternatively, you could place your pan under the broiler to melt the cheese, but I didn’t feel like heating up my oven

Top with more parmesan cheese and devour. This is so delicious…Patrick said it is a winner so it’s husband approved too! Serve it on top of pasta with more marinara sauce and a fresh salad for a healthy and comforting dinner. Or put it on a crusty loaf of bread and make a chicken parmesan sub!

Healthy Chicken Parmesan
Adapted from Cooking Light
1/2 cup Italian seasoned breadcrumbs

1/4 tsp salt, divided

1 pound chicken tenders
1 tablespoon butter
1 1/2 cup marinara sauce
2 teaspoons balsamic vinegar
1/4 tsp black pepper
4 slices part-skim mozzarella cheese
Combine Italian breadcrumbs with 2 T of Parmesan cheese and 1/8 tsp salt. Beat one egg white in a separate bowl. Dip chicken tenders in egg white and then dredge in breadcrumbs. Heat butter in nonstick skillet or cast iron pan. Cook chicken for 3 minutes each side, or until done. Mix marinara sauce, balsamic vinegar, 1/8 tsp salt, and 1/4 tsp black pepper. Spoon on top of chicken tenders and top with the rest of the parmesan cheese and mozzarella cheese. Cover with a lid and cook until sauce is heated through and cheese is melted. You could also place the pan under your broiler to melt the cheese.
