These healthy lemon squares are the perfect summer treat! I just love the tart and sweet filling combined with the buttery crust. Lemon squares have always been a favorite of mine, and this recipe from Cooking Light definitely satisfies that craving without all the extra sugar and butter!
First, make your crust. Beat butter and sugar together with an electric mixer until creamy, then gradually add flour until the mixture resembles fine crumbs.
Press the mixture into an 8×8 pan, and bake at 350 degrees for 15 minutes.
Next, beat eggs until foamy. Add sugar, lemon rind, lemon juice, flour, baking powder and salt and mix well to combine. Pour topping over the crust and bake at 350 degrees F for 20-25 min or until set.
Cool on a wire rack and then top with powdered sugar before serving. I put mine in the refrigerator to help make the squares easier to cut.

Light Lemon Squares
Recipe from Cooking Light
Makes 12 squares
Crust:
1/4 cup granulated sugar
3 tablespoons butter or stick margarine, softened
1 cup all-purpose flour
Topping:
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons powdered sugar
Preheat oven to 350°
For the crust, beat sugar and butter with a mixer until creamy. Gradually add flour and beat at low speed until the mixture resembles fine crumbs. Press this mixture into the bottom of an 8×8 pan and bake for 15 minutes. Allow to cool while preparing the topping.
For the topping, beat eggs until foamy. Add sugar, lemon zest, lemon juice, flour, baking powder and salt and mix until well combined. Pour mixture over crust and bake at 350 for 20-25 min or until set. Cool completely. Sift powdered sugar over the top before serving.
