Homemade Trader Joe’s Chicken Chili Lime Burgers

It’s been a great week so far!  The weather has really warmed up in Vegas…we got to 99 over the weekend!  That means more late evening walks and time spent outdoors with my little sweeties.

 

 

This is a great dinner for a summer evening!  When I saw this recipe on Iowa Girl Eats, it sounded so good, I couldn’t wait to try it!  I remember having the frozen chicken chili lime burgers from Trader Joe’s several years ago, but these are so much better!

The ingredients taste so fresh and light together, and it’s perfect topped with guacamole on a soft sesame bun.  Start by mixing ground chicken with chili powder, cumin, red pepper flakes, chopped green onions, red bell pepper, cilantro, garlic, salt and lime juice.

 

 

Form into 4 patties and spray each side with non-stick spray.  Heat a large skillet or grill pan on medium high heat and cook burgers for 3-4 minutes each side, or until cooked all the way through.

Add a slice of cheese at the end, if you like!  Then place on a bun and top with lettuce, tomato, BBQ sauce, guacamole, whatever your heart desires.  My heart wanted guacamole, of course :)  I love the combination of cilantro and lime in here, and the kick from the red pepper flakes.  This is a perfect light dinner for the warmer weather ahead, hope you enjoy!

 

 

Homemade Trader Joe’s Chicken Chili Lime Burgers

Adapted slightly from Iowa Girl Eats

Makes 4 burgers

1lb ground chicken

2 green onions, chopped

1/4 cup chopped red bell pepper

2 Tablespoons chopped cilantro

2 teaspoons minced garlic

1/2 teaspoon salt

1/4 teaspoon red pepper flakes

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

1 lime, cut in half

Mix all ingredients together and form into 4 patties.  Heat a skillet or grill pan over medium high heat.  Spray each side of the patties with non-stick spray and cook for 3-4 minutes each side, until cooked all the way through.  Top with guacamole, if desired, and serve on a soft, sesame bun.
