I’ve been a fan of Trader Joe’s for a long time, and thought it might be fun to share some of our favorite items from there. I don’t know how Patrick and I would have survived if it were not for TJ’s quick and mostly healthy meals, which we lived on while working 80 hours a week in residency! This Thai Red Curry Sauce is a great one to have on hand for quick dinners…you just sauté up a protein and some veggies, then add the sauce and let it simmer away into spicy, yummy goodness.
Our protein of choice for this sauce: tofu!
I love cooking with tofu! Not only is it a great source of soy protein, but it’s low in fat, cholesterol, and calories, provides calcium and iron (depending on the brand) and is very inexpensive. I use extra firm tofu for my stir-fry recipes as it holds up the best to that type of cooking. I cut it into cubes, and sauté over medium high heat in a non-stick pan with a little oil. The goal is to brown all the edges, so it requires turning each cube 6 times…it’s a process, but you’ll be happy with the result! The tofu will be crispy on all sides and ready to take on the sauce
Now just add in the red curry sauce and your veggies of choice..I put frozen broccoli, edamame, red peppers, and corn into ours! Add whatever vegetables you like!
Simmer just until the veggies are cooked through, and the sauce has thickened a little bit. The sauce has a little kick to it, which we love! Serve hot over brown rice.
Served on the side: korean scallion pancakes with a sesame soy dipping sauce. Or get the chicken gyoza from Trader Joe’s while you’re there, and you’ll be all set!
Mmm…get to your nearest Trader Joe’s, or find a friend who will mail you a bottle, and try it out! It comes in green, yellow, or red curry, but our favorite is the red one. Since we’re moving to Hawaii in a few months, I will have to stockpile all my TJ favorites before we leave
Hawaii doesn’t have a Trader Joe’s, although you can be sure I will be lobbying for a store to be built there very soon!
